Posts: 4422 (11/05/09 09:39:48) Reply Quote More My Recent Posts Message Me Connection Blocking Invite Ignore User's Posts	Tags : None time for a spin off thread. we're all people. we all eat. let's talk about it. especially the homecooking. anyone got food plans for t-day? i'm making glazed orange scones and a soy-seitan turkey. maybe some other stuff. this weekend i'm going to a vegan potluck, and i'm going to bring an apple crisp (pretty much the easiest fall baked good ever!). i use the betty crocker recipe but i replace the butter with vegan margarine. We got a KitchenAid and a food processor for the wedding and I'm stoked. The latest thing I did was roast some pumpkins to get the innards so I could make from scratch pumpkin things. Super easy. Just cut up the pumpkin into halves or wedges, roast them face down on a baking sheet @ 350 for 45-50 minutes, scoop out the flesh and run it through a food processor to puree it. I think i wanna make food gifts this year. Nigella Lawson had some good ideas, one being, take some regular sugar, put some into a mason jar and add to it a fresh vanilla bean pod, opened up and cut into pieces and let it sit for a week. People can use the flavored sugar to bake or to add to coffe or hot chocolate.

NICE. i need to have an actual wedding so i get cool free @$%%. i do already have a massive 14-cup cuisanart food processor, but i had to buy it for myself (ho-hum). it was totally worth it though; i use it to make stuff all the time. it's actually my second fp, my first was a cheap-o from target and died. i've been making my own sandwich bread because one of my cookbooks preferred methods for kneading dough is the fp. i'd never thought to do it that way before. it really makes things easy. Glazed Orange Scones (from Vegan With A Vengeance by Isa Chandra Moskowitz [*the* god of vegan cookery]) 1/2 C soy creamer (rice or soy milk make a fine subtitution) 3/4 C rice/soy milk 1 T apple cider vinegar 3 C AP flour 1/3 C sugar 2 T baking powder 1/4 t salt 1/3 C vegetable oil 3 T finely grated orange zest Orange Glaze (recipe follows) Preheat oven to 400. Lightly grease cookie sheet. In a measuring cup combine the soy cream, rice milk, and vinegar, set aside. In a large mixing bowl, sift together the flour, sugar, baking powder, and salt. Add the rice milk mixture, oil, and orange zest; mix until just combined; the dough should be clumpy and not sticky. Even if there is still a light dusting of flour it's okay. Divide the dough in two. Knead one portion a few times, then form into a 6-inch disk. Cut the disk into six slices, pizza-style, and place each slice on the prepared cookie sheet. Do the same with the ramining dough. Bake for 12 to 15 minutes, until slightly browned on the bottom and firm on top. Transfer to a cooling rack. When cool (if they are still only slightly warm that is okay) transfer to parchment paper. Pour about 2 T Orange Glaze over the scones; let the tops set before eating. If you simply can't wait, prepare to have sticky fingers. Orange Glaze 1 C confectioner's sugar 2 T maragarine, melted 2 T fresh orange juice 1 t finely grated orange zest Sift the sugar into a mixing bowl; add all the other ingredients and mix until smooth. My mom is actually making stuffed peppers right now. Haha. I love my stand mixer! I just never get to use it since I still live at home. Seriously, one of the main reasons I want to move out is to have my own kitchen so I can use all of my appliances that I have stored in the closet. Like my bread maker and Coco-motion hot cocoa machine.

I'm trying to branch out and do more vegan/veggie cooking. Stace I have a great crock pot recipe book called "Fix-It and Forget-It" it has an AWESOME enchilada recipe. There are so many thing you can make in a slow cooker and it's nice because when you're tired you can just come home and eat right away. I'm looking forward to it getting cooler so we can have chili too! And I would cut a ++*#! for one of those KitchenAid mixers!

Posts: 11728 (11/06/09 07:57:01) Reply Quote More My Recent Posts Message Me Connection Blocking Invite Ignore User's Posts	i make a ton of variations on baked chicken and have been experimenting with various spices, trying to use up this humongous canister of breadcrumbs, etc. i have a chocolate cookie recipe that i got out of the newspaper a few years ago (and i usually have to look it up again every year), that gets rave reviews. my mom got me a kitchen-aid hand mixer a few years ago for christmas - even the hand mixer is super powerful and awesome! but i would marry someone totally random just to get a stand mixer (like a green card marriage). i once had a dream about one. i'm not very confident about cooking, i find my strength is more on the baking side of things - i have a bunch of cake pans and often make cookies on a whim, but i've never had any major disasters and everything usually comes out nicely. and once i did have to make thanksgiving dinner for my family, but i had forgotten to turn on the oven so we had to wait two extra hours for the turkey to cook once i discovered that. <3 liz it's not about the money we'll make, it's about the passions that we ache for. what makes your heart beat faster - tell me now, what does your body long after?

It is nice to have a nice shiny new one that can take the attachments, though. I want the ice cream maker and pasta dough roller like a mother.fuc.ker.

Posts: 4425 (11/06/09 16:23:32) Reply Quote More My Recent Posts Message Me Connection Blocking Invite Ignore User's Posts	i've never really understood why people need to use electric mixers for cookie or cake batter (i suppose with cakes it gets more air into the batter). kneading bread takes a little extra umph and though i could do it by hand (and have) i prefer the expediency and ease of pushing a button. i don't believe a person NEEDS much to have a fully functional kitchen and can appreciate the value of truly doing it all by hand, but there is also something to be said for convenience, especially when most people don't really want to make the time to cook from scratch.
